- Snijd het stukje ui klein.
- Was de courgette en snijd hem in blokjes.
- Fruit de ui zacht in de olie.
- Voeg de blokjes courgette toe met 200 ml water en het stukje bouillontablet. Kook dit in 10 minuten gaar.
- Was de bieslook en knip de sprieten klein.
- Pureer de courgettemassa met een staafmixer.
- Voeg ook de gewassen basilicum toe.
- Breng de soep weer aan de kook en garneer met de bieslook.

Courgettesoep, een mooi en lekker recept voor als je wel wat courgette-inspiratie kunt gebruiken. Probeer dan eens deze voedzame en koolhydraatarme courgettesoep boordevol vitamines, mineralen en vezels. Lekker makkelijk te maken, en nog lekker ook. Dus wat wil je nog meer.
Courgette krijgt na bereiding zijn zachte structuur. Maar zal zijn smaak vooral krijgen van de combinatie met andere groente of kruiden. Een verrassende groente dus waarmee je kan experimenteren.
Courgette uit Nederland is een duurzame keuze. Deze zachte, lichtzoete groente past heel goed in verschillende gerechten. In combinatie met tijm, basilicum of kerrie komt courgette het beste tot z’n recht. Door te variëren met groentesoorten krijg je belangrijke voedingsstoffen binnen.
